We come from Rome. In our family, cooking has always been a given — not out of obligation, but out of love. Italian cuisine wasn't a Sunday activity. It was daily life, the bond, the common language of our family.
The recipes you taste today at Pizza Nofa weren't invented in a culinary lab or copied from a book. They were passed down. From hand to hand, from generation to generation. The way to knead the dough, the rising time, the choice of flour, the eye to know when a pizza is ready — all this is learned by watching, doing, and trying again until it's right.
"Our ingredients come from Italy. Not out of snobbery — because Parmigiano Reggiano DOP aged 13 months, Mozzarella di Bufala DOP, Parma Ham DOP 16 months… these products are as much part of our identity as of our menu."
Dough prepared every day — kneaded on-site, rested more than 48 hours, shaped by hand. This long rest isn't a constraint, it's a choice. It gives the dough its lightness, its aromas, and that digestibility our guests regularly notice.
Rigorously selected Italian ingredients — certified DOP, IGP or from organic farming. We also work with truffle all year round, delivered directly by our truffle growers.
A cuisine that evolves — our menu adapts to seasons and current inspiration, while keeping the recipes our regulars love.
